6 sweet red or green peppers or 2 pounds 22 / Cuf

2 or 3 large hot red peppers or 1 coup

6 ½ cups sugar

1 cup vinegar

½ cup water

1 - 6 ounce bottle liquid fruit pectin

Put the peppers through a food processor or grinder, I use some seeds. Put peppers in large saucepan - add sugar, vinegar, and water. Bring to boiling; add pectin. Boil vigorously 1 minute.

Remove from heat: let stand 5 minutes. Skim foam and pour into hot clean jelly jars and seal. Makes 4 pints.
